Zack Vasilev is a seasoned industry professional with over 25 years of experience spanning Europe and Las Vegas. With a deep passion for wine and an exceptional understanding of the industry, he currently runs the wine program at Barry’s Downtown Prime Steakhouse at Circa Resort & Casino in Downtown Las Vegas, earning multiple accolades, including the prestigious 2024 Wine Spectator’s Best of Award of Excellence.

His extensive expertise in both distribution and on-premise sales, combined with two Master’s degrees in Economics, provides him with a unique vantage point and a comprehensive understanding of the wine business. This dual perspective enables him to navigate the complexities of the industry with strategic insight, ensuring optimal product selection, seamless supply chain management, and an elevated guest experience.

Creation of Wine (Beverage)
programs

I specialize in creating and managing wine programs for restaurants, hotels, bars, and hospitality venues. My job is to curate a wine list that not only complements the menu but also enhances the overall dining experience. I source wines from around the world, work closely with distributors, and ensure that each selection aligns with the restaurant’s concept, clientele, and business goals. I also redesign programs that are already in use but deliver little to no fiscal results.

Cellar Management

I help collectors, investors, and enthusiasts build, maintain, and optimize their wine collections. My work includes appraising wine collections to determine their value, acquiring rare or sought-after bottles, and liquidating wine when clients want to sell. I also assist with wine investment, guiding clients on selections that appreciate in value, and curating collections tailored to personal tastes or dining experiences. Whether it’s a private collector looking to refine their cellar, a restaurant needing a well-balanced wine program, or an investor seeking high-value wines, I provide expertise to ensure they make the best choices.
